Boil or bake the sweet potatoes until tender. Mash and let cool. Meanwhile, cook red lentils until soft but not mushy. Drain excess water and let cool.

Step 2: Mix the Patty Dough

In a large bowl, combine mashed sweet potato, cooked lentils, chopped onions, garlic, herbs, spices, breadcrumbs, and the egg. Stir well until a thick, moldable mixture forms. If too soft, add extra breadcrumbs a tablespoon at a time.

Step 3: Shape and Chill

Using your hands, shape the mixture into 8–10 small patties. Place them on a tray and refrigerate for at least 30 minutes—this helps them hold together better during cooking.

Step 4: Make the Avocado Sauce

In a blender or food processor, combine avocado, yogurt, lime juice, garlic, cilantro, olive oil, and salt. Blend until creamy. Add water to thin if needed. Taste and adjust salt or lime as desired.

Step 5: Cook the Patties

Heat a nonstick skillet over medium heat and add a bit of olive oil. Cook patties in batches, 3–4 minutes per side, until golden brown and crispy. Handle gently when flipping.
