Ingredients (for 4 servings):
- 4 cups cubed seedless watermelon (frozen overnight)
- 1/2 cup full-fat coconut milk or condensed coconut milk
- 2 tablespoons honey or agave syrup (optional)
- 1 teaspoon lime juice

Optional Ingredients:
- A few fresh mint leaves (for blending or garnish)
- 1/4 cup mini chocolate chips (for a “choco-chip” twist)
- 1/2 banana (for creaminess)
- 1/2 teaspoon vanilla extract
Instructions:
- Freeze watermelon: Cut seedless watermelon into cubes and freeze overnight.
- Blend: Add frozen watermelon, coconut milk, sweetener, lime juice, and salt to a high-speed blender or food processor.
- Process: Blend until creamy and smooth. You may need to scrape down the sides.
- Freeze again (optional): For a firmer texture, pour the mixture into a container and freeze for 1–2 hours.
