Spicy Garlic and Dill Pickles

🥄 INSTRUCTIONS

1. Prepare the Vegetables

  • Wash and slice the cucumbers and carrots.

  • If using onion, slice it thinly.

  • Place all vegetables and garlic into a clean jar.

2. Add the Spices

  • Add the red pepper flakes, mustard seeds, coriander seeds, peppercorns, dill (seeds or fresh), and bay leaf to the jar.

3. Make the Brine

  • In a saucepan, combine water, vinegar, salt, and sugar.

  • Bring to a boil over medium heat, stirring until salt and sugar dissolve.

  • Remove from heat.

4. Pour the Brine

  • Carefully pour the hot brine over the vegetables in the jar, making sure everything is fully submerged.

  • Use a spoon to press down and remove air bubbles if needed.

5. Cool and Refrigerate

  • Let the jar cool at room temperature.

  • Seal with a lid and refrigerate.

  • Let the pickles marinate for at least 24 hours. For the best flavor, wait 2 to 3 days.

  • Serve with sandwiches, burgers, or as a crunchy snack.

  • Great for topping salads or charcuterie boards.
