Skinny Raspberry Oatmeal Bars Directions:
Preheat the oven to 325°F (163°C). Grease or line a 9×13-inch baking dish with parchment paper.
In a bowl, combine the whole wheat flour, oats, cinnamon, butter (or yogurt), salt, vanilla extract, and sugar substitute. Use a mixer to combine on low for 1 minute, then scrape down the sides of the bowl and mix on medium for 2 minutes.
Take about 2/3 of the oat mixture and spread it evenly into the prepared baking dish, pressing it down to form a crust.
Set the remaining oat mixture aside for the topping.
To make the filling, combine the raspberries, sugar substitute, lemon juice, and corn starch in a separate bowl. Stir until the mixture is uniform and smooth.
