Instructions
Preheat the oven to 350°F (175°C).
Heat olive oil in a skillet over medium heat and sauté celery, onion, and garlic until softened, about 5 minutes.
In a bowl, combine the sautéed vegetables with breadcrumbs, parmesan cheese, parsley, lemon juice, salt, and pepper.
Stuff the shrimp with the breadcrumb mixture and place in a greased baking dish.
Bake for 15-20 minutes, or until the shrimp are cooked through and the top is golden.
