Philly Cheesesteak Baked Potato

Instructions:
Bake Potatoes:
Preheat your oven to 400°F (200°C). Wash the potatoes and pierce them several times with a fork. Bake directly on the oven rack for 45-60 minutes, until tender.
Cook Beef and Vegetables:
In a large skillet, heat the olive oil over medium heat. Add the sliced beef and steak seasoning mix. Cook until browned, about 5 minutes. Remove from the skillet and set aside. In the same skillet, add the onion, green bell pepper, red bell pepper, and mushrooms. Cook until tender, about 7 minutes.
Assemble Potatoes:
When the potatoes are done, let them cool slightly, then cut them in half lengthwise and scoop out some of the flesh, leaving a small border. Fill each potato half with the cooked beef and vegetable mixture. Top with shredded provolone cheese.
Melt Cheese:
Place the filled potatoes on a baking sheet and return to the oven for 5-10 minutes, until the cheese is melted and bubbly.
Serve:
Serve hot.
