Instructions
In a large bowl, combine salmon, spinach, red onion, garlic, feta cheese, egg, breadcrumbs, parsley, oregano, lemon zest, salt, and pepper. Mix until well combined. Shape into small patties, about 6-8.
Heat olive oil in a skillet over medium heat. Cook the patties for 3-4 minutes per side until golden brown and cooked through. Remove and place on paper towels to drain excess oil.
In a small bowl, whisk together Greek yogurt, lemon juice, lemon zest, olive oil, salt, pepper, and herbs until smooth and creamy.
Serve the patties warm with a generous dollop of lemon yogurt dressing and a side of fresh cucumber-tomato salad or warm pita bread.
