Ground beef 1 pound
Taco seasoning 2 tablespoons
Refried beans 1 cup
Colby cheese, grated 8 oz

1. Preheat & Prep

  • Preheat oven to 375°F (190°C).
  • Line two baking sheets with parchment paper for easy cleanup.

2. Heat the Beans

  • In a small saucepan, combine refried beans with about ¼ cup water.
  • Warm over medium-low heat, stirring occasionally until smooth, hot, and spreadable.
  • Remove from heat and let cool slightly.

3. Cook the Beef

  • In a skillet over medium-high heat, heat the olive oil.
  • Season the ground beef by sprinkling half the taco seasoning over the meat in the package.
  • Place the seasoned side down in the skillet and sprinkle the rest of the seasoning on top.
  • Cook, breaking the meat apart with a spatula, until fully browned and cooked through.
  • Drain off any excess fat.

4. Assemble the Tacos

  • Spread the tortilla chip rounds on the prepared sheet pans.
  • On each chip, spread a small layer (about a teaspoon) of refried beans.
  • Top each with a spoonful of the seasoned ground beef.
  • Sprinkle generously with grated Colby cheese.

5. Bake

  • Bake for 6–8 minutes, or until the cheese is melted and bubbly.

6. Fold & Finish

  • While still warm and soft, gently fold each mini taco in half.
