1 small red onion, thinly sliced

A handful of fresh basil leaves, torn

2–3 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar (optional)

Salt and freshly ground black pepper, to taste

Optional: Fresh mozzarella balls or shaved Parmesan
