In a saucepan over medium heat, combine sausage drippings and flour, stirring continuously to form a roux.
Gradually whisk in the milk, stirring constantly to prevent lumps. Season with salt and black pepper, then cook until the gravy thickens. Set aside.
In a mixing bowl, whisk together the eggs with a dash of milk. Heat a skillet over medium heat and cook the eggs until softly scrambled, then remove from heat.
Preheat the oven to 180°C.
Arrange split English muffins on a baking sheet. Spread a generous layer of sausage gravy on each half, then top with scrambled eggs, crumbled sausage, and shredded cheddar cheese.
Bake in the preheated oven for 10 minutes or until the cheese is melted and bubbly.
Remove from oven and allow to cool slightly before serving.
