Pour 125 ml of cold water into the blender jug.
Add the instant coffee, 125 g of sugar and mix with the immersion blender.
Blend for 15 minutes, then add another 125g of sugar.
Mix from bottom to top to whip the cream.
Dissolve the sugar well to avoid lumps forming.
