Baked Eggplant and Potatoes (Vegetarian, Meatless, but Delicious!)

 

Procedure:

  1. Prepare the vegetables:
    • Wash the aubergines well and cut them into slices or cubes, as desired.
    • Peel the potato and cut it into thin slices (like baked potatoes)
      • First cooking:
        • Heat a drizzle of olive oil in a pan and fry the eggplant slices until golden brown. For a more intense flavor, add a crushed garlic clove and remove it before serving.
        • Cook the potatoes in the same way (if you prefer, you can cook them separately).
      • Assemble the dish:
        • Arrange the aubergines and potatoes in alternating layers on a baking sheet.
        • Season with salt, pepper and, if desired, a little chopped rosemary or parsley.
      • Completing cooking:
        • Drizzle with olive oil and bake at 180°C for about 25-30 minutes, or until the potatoes and aubergines are soft and golden.
      • Supplement:
        • Once ready, remove it from the oven and let it cool slightly before serving.
