Espaguete à Portuguesa (Portuguese-Style Spaghetti)

Ingredients:

For the Sauce:

  • 2 tbsp (30 ml) extra virgin olive oil

  • 1 large yellow onion, finely diced

  • 4 cloves garlic, minced

  • 200g (7 oz) chouriço or linguiça sausage, casing removed and sliced into half-moons

  • 1 lb (450g) ground beef (or a 50/50 mix of beef and pork)

  • 1 red bell pepper, finely diced (optional, for sweetness and color)

  • 1 bay leaf

  • 1 tsp sweet paprika (pimentão doce)

  • ½ cup (120 ml) dry white wine (or red wine for a richer flavor)

  • 1 (800g / 28 oz) can crushed tomatoes or tomato passata

  • 2 tbsp tomato paste

  • 1 cup (240 ml) beef or chicken broth, or water

  • Salt and freshly ground black pepper, to taste
