Shrimp, Luffa, and Tofu Soup 🥣🌿
This delicate soup combines shrimp, luffa, and tofu for a light yet satisfying dish that’s packed with nutrients.
Ingredients:
2 luffa gourds, peeled and sliced
1 block of soft or silken tofu, diced
8 oz shrimp, cleaned and deveined
1 tbsp cooking oil
2 cloves garlic, minced
4 cups broth (chicken, seafood, or vegetable)
1 tbsp soy sauce or fish sauce (optional)
Salt and pepper to taste
Fresh herbs (green onion, cilantro)

Prep Ingredients:
Peel and cut the luffa into thin slices. Dice tofu and clean the shrimp.
Cook Garlic & Luffa:
Heat oil in a pot, sauté garlic until aromatic. Add the luffa and stir until slightly softened.
Simmer Soup:
Add broth to the pot, bring it to a boil, then gently add tofu cubes. Let simmer for 5 minutes.
Add Shrimp & Season:
Stir in the shrimp, cooking until pink. Season with fish sauce, soy sauce, salt, and pepper.
Garnish & Serve:
Top with chopped green onions and cilantro. Serve immediately.
