Brown Sugar Bourbon Chicken Thighs on Chinese Fried Rice
Ingredients:
For the Brown Sugar Bourbon Chicken:
– 4 bone-in, skin-on chicken thighs
– 2 tbsp olive oil
– Salt & black pepper
Bourbon Glaze:
– ¼ cup bourbon (or substitute apple juice)
– 3 tbsp brown sugar
– 2 tbsp soy sauce
– 1 tbsp honey
– 1 tbsp ketchup
– 1 tsp smoked paprika
– 2 garlic cloves (minced)
– 1 tsp grated ginger
– ½ tsp chili flakes (optional)
– 1 tbsp butter
For the Chinese Fried Rice (Round Mold):
– 2 cups cooked jasmine rice (day-old preferred)
– 2 eggs (beaten)
– ½ cup diced carrots
– ½ cup peas
– 3 green onions (chopped)
– 2 garlic cloves (minced)
– 1 tbsp ginger (minced)
– 3 tbsp soy sauce
– 1 tbsp oyster sauce
– 1 tsp sesame oil
– 2 tbsp vegetable oil
– Salt & white pepper to taste
Garnish:
– Toasted sesame seeds
– Sliced green onions
– Extra bourbon glaze (optional)
