Ingredients:
1 lb beef sirloin or stew meat, thinly sliced
8 oz penne pasta
2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 can 10.5 oz cream of mushroom soup
1 cup beef broth
8 oz Velveeta cheese, cubed
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper, to taste
Fresh parsley, chopped, for garnish
Directions:

1. Cook the penne pasta according to package directions. Drain and set aside.
2. Heat olive oil in a large skillet over medium-high heat. Add the beef and cook until browned, about 4-5 minutes. Remove the beef and set aside.
3. In the same skillet, add the onion and garlic. Cook until softened, about 3 minutes.
4. Stir in the cream of mushroom soup, beef broth, and Worcestershire sauce. Bring to a simmer.
5. Add the Velveeta cheese and stir until melted and smooth.
6. Return the beef to the skillet and stir to combine. Season with thyme, salt, and pepper.
7. Add the cooked penne pasta to the skillet and toss to coat in the creamy sauce.
8. Serve with a sprinkle of fresh parsley for garnish.
