Fry the onion, garlic, bay leaves and allspice in olive oil. Once aromatic add in the pork meat to fry. Add in your spices and whole chouriço. After a few minutes, add in the chicken cube and hot water to simmer meat for 40-50 minutes untill very tender. *Add a bit of water at a time to go just below the meat. It’s easier to add a little liquid as you go then trying to fix a watered down meal. Remove the chouriço and cut up in pieces to decorate for later (set aside). Add in the carrots, cabbage and collard greens to simmer for 10 minutes. Then add in your cooked beans with liquid. Let simmer for another 10 minutes untill heated and sauce thickens from the beans. I also mash up a few beans to naturally thicken up the sauce very nicely. Garnish with parsley. Serve with rice. Enjoy!
